Upcoming Projects & Summer Update
Hello my lovelies!
It’s been a little while since I posted but I don’t have anything new to post at the moment so I thought I’d let you all know what I’m working on.
I have quite a few projects in-process but nothing that’s completed that I can post about just yet. So here’s what I’ve got coming up!
Upcoming Projects

This is "Bob the Beef," and he is the steer I bought a quarter of. Notice he is eating GRASS like a proper ruminant animal, not grains, candy wrappers, and ground-up parts of other beeves like commercial beef cattle does. I'm sure he will taste excellent.
Just on Friday we took a trip up north and picked up a quarter of a grassfed beef and half of a pastured pork.
I am super excited because that means I can finally finalize my corned beef recipe, which I’ve been working on.
We got a new BBQ that I will be converting to a smoker (I’ll blog it) and I’ll be smokin!
Actually I mean I’ll be smoking some home-made bacon and hopefully later this summer I can work on doing some sausages.
I’m also going to try making homemade smoked sea salt.
We lost part of a walnut, some wild cherry trees, and a Granny Smith apple tree in the ice storm this last winter and so we’ve got lots of wood in the shed for smoking.
Other Yummies
I’ve invented a Paleo Coconut-Nutella Fudge (Paleo meaning honey-sweetened and no dairy or grains) which I’ll be posting this month, and something I’m working on this week is homemade Larabars for our road trip next week.
Both of these are going to feature my awesome beloved Ninja Blender. I think I need to give my Ninja a name, I adore it that much.
I’m also experimenting with lacto-fermentation of vegetables which so far is turning out pretty good. In fact, I have one recipe (will probably be my next post) that my husband loved so much he couldn’t stop eating it yesterday and almost spoiled his dinner
Next week I’ll be leaving town for a couple weeks to visit friends & family from out of state and I’m pretty far behind on household stuff. Soooo… unfortunately that means no more posts this week.
If I had money I’d hire a maid to just clean up after me so I could just cook and play all day. (Click here to tweet this)

OH! I almost forgot… I had taken a pretty awful video of how to make corn tortillas which I’ll be posting at some point in the next month, so that will be pretty fun. Knowing me, I’ll be editing the video while we’re on the road… lol.
And pretty please you’ll have to forgive my ghetto camera skillz. I have a cheapo digital camera and it’s my first one!
And, last but not least, even though I don’t eat much wheat I’m going to be working on getting some guest posts, tips from other cooks, and instructions on breadmaking put together. One thing I think I might do is show y’all how to make no-knead sourdough bread which I think is one of the easiest, tastiest artisan type breads around.

I like either photos/written materials or video, but I like when video is an added option, not the only thing. That’s because I can take in info more quickly at a glance with the photo/written materials. So my main complaint about videos is when they are too long. I like to get the info in just a minute or two, definitely not, say, six minutes. I think it’s a great idea to put the videos on YouTube and then link to them from your site. I should do more of that myself.
